MEATBALLS

INGREDIENTS:
⅓ cup plain bread crumbs
½ cup milk
2 tablespoons olive oil
1 onion, diced
1 pound ground beef
1 pound ground pork
2 large eggs
2 tablespoons grated Parmesan cheese
¼ bunch fresh parsley, chopped
3 cloves garlic, crushed
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon dried Italian seasoning
½ teaspoon red pepper flakes
INSTRUCTIONS:
SOAK THE BREAD CRUMBS
Combine bread crumbs and milk in a small bowl.
Let soak for 20 minutes.
COOK THE ONIONS
Heat olive oil in a skillet over medium heat.
Add onion and cook, stirring, until translucent, about 5 minutes.
Reduce heat to low and continue cooking until very tender, about 15 minutes more.
MIX THE MEATBALLS
Gently combine beef and pork in a large bowl. Add cooked onions, soaked bread crumbs, eggs, Parmesan, parsley, garlic, salt, pepper, Italian seasoning, and red pepper flakes.
Mix with a rubber spatula until just combined.
Cover and refrigerate for about 1 hour.
BAKE THE MEATBALLS
Preheat oven to 425°F (220°C). Line a baking sheet with foil and spray lightly with cooking spray.
Form mixture into 1½-inch balls and arrange in a single layer.
Bake until browned and cooked through, 15 to 20 minutes.
FINISH
Add meatballs to your favorite tomato sauce and simmer for 1 to 2 hours before serving.
